I’ve been getting into bad habits recently. My birthday week featured a LOT of pastry and cake and I’ve been struggling to get my act back together and back onto the 5:2 diet. My appetite has just been out of control!
So, this morning I walked to work. It felt really good and what do you know….I didn’t snack until lunchtime. Alleluia.
I saw some canned chickpeas in the kitchen at work and it got me wondering how to make them into a healthy lunch….which is when I stumbled across these two blog posts from TheStoneSoup.com:
It’s a great blog with lots of healthy ‘no cook’ lunch ideas – brilliant for when you’re at work.
I was inspired to do this salad: Canned chickpeas (cooked in the microwave for 2 mins), avocado vine plum tomatoes, spinach leaves, broccoli, lemon juice, extra virgin olive oil & pepper to season.
It only took me a few mins and I’ve got plenty for tomorrow 🙂 Hopefully this will see my appetite return to normal levels so I can do the 5:2 diet again without too much pain!
